Can anyone point me to a textbook with a good description of lock in
amplifiers, including the mathematics and perhaps some intuition. I
have Horowitz and Hill here but it isnt' very useful for this topic

I don't know if these are the best available resources on the web, but
they might get you started. For lock-in amplifiers try:

Lock-in amplifiers are closely related to chopper stabilized
amplifiers. You can find many resources for these. One good
introduction on the web is:

The Wikipedia entry for Chopper (electronics) has a couple of
references that might be useful. Note that chopper amplifiers and
lock-in amplifiers are related to switched capacitor filters, and
there is a huge literature on those.

Thanks Rich!
I have added the docs you mention to my collection. The first did a
really nice job on noise issues. I found a very basic doc that got me
started:
