I have a hypertherm max 100 cutter. I installed new under 40A
consumables. I had little time to try it, but it seems that my cutter
makes nice cuts, however, it sticks to material if the nozzle touches
metal. So, being a newbie to plasma cutting, I would like to find out
what is the right solution, maybe to buy/make some wheels for proper
standoff? Or is there something else that I am missing?

Did you look at the manual for the breakdown of torch components and
options? It sounds like you might have the unshielded components on the
torch which would be applicable to mechanized operation. For handheld
the torches have a copper shield at the front that maintains the proper
standoff distance and has a crosscut to allow slag from piercing to
exit, at least this is how the G3 torch on my 1000 is.

Well, there are different consumable combos. One is for 100A cutting,
that one includes the shield. The other is for 40A cutting, and this
one has an unshielded nozzle.
I would think that I should use under 40A current, so I have a few
under 40A consumable pieces. Maybe I should just try to put on the
100A shield and see if it would fit.

I've got a stand-off tip on the torch so I just drag it. Works well.
Stop by your local welding supplier and see what they've got.

Steve and Pete, I made little standoffs from small steel bar, 10-32
screws and #10 fender washers. I will try to attach them to the torch
to get about 1/16" standoff distance, will report how it goes.

Both of my torches on my Hypertherm 600 have 4 posted with the cutting hole
in the center. The four posts ride on work as the beam burns metal.
The large hole one is for special very thick metal that you don't cut you
melt down.
Another is for machine operation. These are normally defined in the box
of components and is defined on the web site.
