I know there's FAQ's out there relating to rainbows, but I can't seem
to find one relating to similar phenomenon.

I've seen a rainbow-like structure the last couple of mornings when
I've been driving west, with the sun just coming up behind me. It's
not been raining but it has been a very frosty morning, so I'm
wondering whether it's ice crystals or dew in the atmosphere that's
giving rise to something very similar to a rainbow.

Regards

Google: rainbow sundog glory rays droplets

Yielded, among others:

http://www.sundog.clara.co.uk/resource/indx.htm

That should be enough for you.

I should add that this URL (to the same website) might be
a less daunting start point:

http://www.sundog.clara.co.uk/atoptics/phenom.htm

His website deserves real credit; it's a good resource; I've been there
several times before anyway.

He hardly even seems to mention himself on the site.

Nice site, whoever-you-are!
