Does anybody know why the mono set of remastered Beatles is twice the file
size of the stereo? Also, in the mono set, what happens to Abbey Road and
Let It Be?

You get the old stereo as well as a bonus

That's only true for Help and Rubber Soul.

True. These two albums were released in mono in several countries
(though not the US or UK) but they were just folded down stereo, just
like the UK mono Yellow Submarine album.
