Isn't this just the realization of one of Model Railroader's April Fool's
stories from a few years ago - the building of a 1:1 scale model of a
railroad - the Wisconsin Central, IIRC?

Onion Pacific is no different in that regard than any other legal
entity, but the odds of them filing suit for your having made one "UP
octopus" are nil. (Were you to go into business selling them for a
living it would no doubt be a different story.)
Q: What's the difference between Union Pacific and an onion?
A: Nobody would cry if you chopped up Union Pacific.
