Potato Pancakes
3 large potatoes
1 small onion
2 eggs
1/2 cups sifted all-purpose flour
Salt & Pepper to taste
shortening for frying
OPTIONAL: parsley, green onion/chives, paprika, whatever suits your taste
Grate potatoes & onion with medium grater, mix, add unbeaten eggs, stir to blend, add flour, salt &pepper, spices as desired. Melt enough shortening
in skillet to make about 1/2 inches - when very hot (or when 1" cube of bread becomes golden brown in 60 secs), spoon in potato mixture - about 1/4 cup
for each pancake makes a nice size. Pat lightly with a spoon to spread to desired thickness. Fry on both sides until golden brown.
Makes about 12
