There's a boxed mix for potato dumplings -- I think the brand is
"Panni". You mix the stuff with liquid and maybe an egg (don't recall)
form it into balls and drop into boiling water. They come out
marvelously "elastic" and are just a wonderful way to get gravy into
your mouth without using a spoon.
Anyhow, it just popped into my head that you might be able to make a
passible batch of gnocchi with the stuff by extruding it from a pastry
tube and cutting into pieces as it heads for the boiling water. Maybe
add a bit of flour to tighten it up some, or a bit of grated parmesan.
Cheap, easy and totally inauthentic, but...
Whattaya think?
