We arrive at MIA Friday around 1400 for a cruise. We have a hotel in
Miami Beach (Carol wanted something close to the terminal). The ship
leaves at 1630 on Saturday, but we'd like to be on by about 1300.
I know, not much time, but maybe we can get together and talk scuba.
I'm planning on coming back later in the fall for a couple of days of
diving.

If I can get a place to hang out on Friday night, I'd be interested in a
social trip.

Short update. Jayna, Lee & I had dinner with Carol & Dillon on Friday
night.
Worth the detour, and still made it back to Manatee Springs for a nice
little dive on Saturday afternoon. |

admit to being, at least as far as tasting hot sauces).
Like Scott, I have a decent tolerance for the hot stuff but it's hard
to find a place to show off my "technique". Jalapenos and serranos,
the typical mexican hot chiles, are child's play for me, and most of
the Chinese/Thai/Indian places out here dumb their food down for
typical American palates. But when I was aboard a liveaboard in
Thailand (to keep this on topic), I was served a bowl of the hottest
food I've ever been served commercially, a bowl of Tom Kha Gai that
was so chili-laden that each small sip from a teaspoon was sheer
torture. The rest of the passengers had a few sips and let the rest
be taken away while they soothed their tongues with ice water, but our
one Swede on the boat, Angus, kept up with my pace and I knew we had a
competition. As a longtime resident of ex-Mexico, I certainly
couldn't let myself get beaten by a Swede. Eventually we both
finished our bowls and declared a tie, though I have to say that Angus
looked a lot worse for wear than I did by the end of it, his face
fully flushed red, eyes and nose watering, and he couldn't talk.
Then one of the local DMs sat down with his bowl of soup. To our
astonishment, he sampled a few sips, frowned, then reached for the
Thai chili powder and sprinkled a small handful in it before retasting
and sighing contentendly. If I had had a bottle of Dave's Insane, it
would have been interesting to see how he handled it. Maybe next time. |

You guys were dynamite. Thanks for the ride over there. And the
interesting "tour" that Jayna's GPS gave us. Of course, mine kept
telling us to drive through the barricades, so I wasn't much help.
Cruise tale in a bit, but it involved the words "apple, allergy,
anaphylaxis, sick bay, 100 mg Benadryl, IV push, can't remember
Sunday"

Quote: I just finished cooking up a batch of habanero sauce. The habaneros are
from my garden and were just picked. It's sitting in a pot cooling
outside on the deck. Cindy made me do all of the prep and cooking
outside, and forbids me to bring the stuff inside before it is sealed in
jars. I had to rinse all of the utensils outside before bringing them in
to wash. This is some of the hottest stuff I've ever tried.
I have a little jar of habanero salsa that was a gift, and it is like a
bomb.
The flavor is great, but if you disrespect it, you will wish your parents
never met.
We did a big can, actually one of those sets they sell for deep-frying
turkeys, of gumbo.
Crab, clams, halibut and crawdads that I caught diving, plus genuine
Andouille sausage, Walla-Walla sweets, Scotch Bonnets and big ole Idaho
taters.
We bought the halibut and clams, but I scored the bugs.
Cajun Tim, who was the local boat mechanic, came in the next morning, while
we all sitting there sweating, and as he gently sat down said "Damn. You all
making me homesick."
This was the day we invented vanilla ice-cream suppositories. |

No one could eat that shit.
I am pretty good at spicy, but that was off the hook.
I remember one called something like "Dave's Instant Insanity Sauce"... I
tried it and it was impressive... I used it when I cooked chili... I just
got back from a week in Mexico (drove my Harley down there) and found a
habenero sauce that I like -- La Anita... I picked up 8 bottles of it and
brought it back with me...

That's a water based sauce... I like the oil based ones instead... Of
course, you can make your own easily enough... Just heat up some oil in a
pan to just shy of where it starts to smoke... In a ceramic bowl or
something that will withstand the heat, pour the oil over a quantity of
crushed red peppers (and maybe a bit of minced garlic or black bean for
flavoring). After it cools off, cover it and put it in the fridge for a
few days.

Oil based is better, it won't wash off with water, which makes it more
amusing to watch.
We have a bottle with pepper infused oil. It gets better over time.
When Carol makes one, she puts it up for about three months. But this
is cold oil. I'll have to try heating the oil.
For New Year's Eve, I always make three batchs of chili. Pussy, ancho
and habenero. One year I made a horrible, terrible mistake. I always
wear gloves when I cut the pepper. Well, one of my eyes started to
give me a little trouble (probably the oils turning into an aeresol)
and I (we all know what's coming) rubbed it with a finger. One reason
I wear gloves is so that I can strip them off as I need.
I stood in the shower with the hand held spraying up into my face for
about ten minutes.
I won't talk about the time I nicked my finger chopping Hatch chilles
for some mashed potatoes.

Or the time that you went to the bathroom to pee and didn't think about the
pepper juice that might be in the pores of your fingers...
Personal experience there... It doesn't hit you until you get back to the
kitchen and then it slowly builds up...
Heh, that happened to me just last night after deveining a bunch of
jalapenos with my bare fingers. Sure gives "weenie roast" a new
meaning. |
